Welcome to Thinking Out Loud Thursday! Today I'm thinking about my time off work last week. Before COVID changed the world, we were going to be in San Diego. I was flying out with a friend to attend the RISE Conference and Eric was going to join me when it was over. We were going to spend a few glorious days at the Del Coronado Hotel, sitting on the beach and listening to the waves.
Instead, we settled for a staycation. For years I've been thinking about taking a week off work and just staying home. My vision was I'd get caught up on all the things that needed to happen "someday". Well, "someday" came last week and I had my chance!
I'm a list maker. Weeks ago I started my page titled "Things To Do While I'm Off Work and At Home". It was a long list and not everything got crossed off, but here are a few things that did ~
We got a chance to see our newest grand kitten. His name is Myth and he's adorable!
Monday night we had a virtual happy hour with friends. If you read my Five on Friday post from last week, I talked about the wine gift we had received from our friend Linda. Monday night we opened our bottles and toasted our friendship!
Eric and I participated in an online cooking class Tuesday held by one of my favorite local shops, Fezziwig's. The French Parisian Picnic was presented by chef Theodore Leaf. He was coming to us from his home in California.
When we signed up for the class, we received a shopping list and instructions for the menu. We followed along and made Rare Roast Beef & Shallot Confite Tarttines, French Potato Salad with Tarragon Vinaigrette, French Haricot Verts (Green Beans) with Lardon (Bacon), and a wonderful Lemon Fig Galette.
The really good thing about their classes is they are on Zoom right now, so you don't have to be a local to participate. Check out their upcoming classes HERE!
Thursday we visited a local park we had never been to and did a 3.7-mile walk around the lake. Creve Couer Lake is located not that far from where we live, but we just had never been there before. You can rent bikes, kayaks, canoes, and paddleboards if you're so inclined.
We could not have ordered better weather for the day! It was wonderful being outside and spending the day together.
After the walk, we ventured to another place we hadn't been - Klondike Park. Here we walked a short trail which led to a lookout over the Missouri River.
The day was still pretty young so we stopped by the Historic Daniel Boone Home. I had been there years ago, but it was Eric's first time to visit. The home sits on nearly 300 acres and includes a historic village. There were hardly any people there, so social distancing was not a problem!
Friday night my daughter-in-law, Kayla, and I shopped virtually at the Joya sample sale. We had each purchased the VIP box for early access. Talk about happy mail! The box was a winner!
Saturday was a hot one! We enjoyed lunch with friends at one of our favorite places - Peel. They had plenty of outdoor seating and a new way to view the menu.
After lunch, we joined our friends in their pool. It was a great way to spend the afternoon!
We spent Sunday trying to cross as many chores off the list as possible. I washed and waxed my car, cleaned out the extra refrigerator in the garage, weeded the garden, cleaned out closets. "Someday" chores.
No, it was not San Diego. But it was nice having a week off work and spending time with Eric.

ReplyDeleteYou were very busy, Penny, and accomplished a lot and it sounds like you also had some wonderful fun hiking and visiting Daniel Boon's home.
ReplyDeleteMy husband and i have been busying cleaning our yards and garage and other chores around the home that needed to be taken care of this time of the year.
So glad you were able to have a little getaway with perfect weather even if it wasn't San Diego and the RISE conference!
