We have a new favorite breakfast item - egg bite muffins! I made them for the first time for Girls' Weekend earlier this year and whipped them up again for the tea I recently hosted. They are so easy to make and taste delicious. I'm sure they will be making a lot more appearances when I cook breakfast.
Here's What You Need
9 large eggs
1 pound of ground sausage, cooked and drained
1 red bell pepper, diced
3 tablespoons of milk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3/4 cup of cheddar cheese
Salt and pepper to taste
Here's What You Do
Preheat the oven to 375 degrees.
Brown the sausage, drain and pat with a paper towel to remove any excess grease. We use mild sausage. You could kick up the flavor by using spicy sausage. To crumble the sausage I used my favorite crumbler tool. It's definitely one of my favorite kitchen gadgets!
Dice the red pepper into fairly small pieces.
Add all the other ingredients to the bowl and stir together.
Spray muffin tins with nonstick cooking spray. This recipe will make 12 muffin bites, so spray that many spots.
Scoop the egg mixture into the muffin tins. I use a third cup measuring cup and it works out perfectly to fill 12 muffins. Don't panic about the thickness of the mixture. Once baked, the eggs puff up around the other ingredients.
Bake for 15-20 minutes. They are done when the edges are lightly golden in color.
Remove them from the pan as soon as they come out of the oven. They will slip right out, but if you have any issues run a knife around the edges. Arrange on a platter and garnish.
I picked up a cute set of tongs for serving. They came in a package of three and will be handy for so many things.
The egg bite muffins could be plated with an English muffin or croissant and a bit of fruit for a fancy breakfast presentation or served on a platter like I did for the tea. I've also made them for just me and Eric and wasn't fancy at all in the presentation! If you happen to have any leftovers, they are great warmed up in the microwave.
