Easy Peasy Tortellini Soup


This time of year I'm always looking for a simple, quick dinner idea.  If you're in the same boat, I have a recipe for you!  My friend, Linda, shared this soup concoction with me a few years ago and we love it!  You can literally have this meal on the table in 15 minutes.  Now who doesn't love that?!?

Here's What You Need


Large can of chicken broth (I use the carton)
1 can of diced tomatoes (We love the fire roasted with garlic version)
Package of refrigerated tortellini (cheese is the preferred flavor for us)
Basil
Shredded Parmesan cheese to sprinkle on top

Here's What You Do

Stir the chicken broth and can of diced tomatoes together in your pot.  Don't drain the tomatoes -- dump the whole can in.  Let that simmer for about 5 minutes.

Add your tortellini and bring to a boil.  Follow the package directions on how long to let the tortellini cook - usually about 7-8 minutes.  


When the tortellini are plumped up and ready to eat, toss in some chopped basil.  Give a quick stir and you are ready to bowl it up and get it on the table.


I have gotten in the habit of serving this soup with a large Parmesan cheese crisp.  Have you made these before?  So, so easy!  Preheat your oven to 400 degrees, spread a clump of shredded Parmesan cheese on a parchment paper lined cookie sheet.  Pop in the over for 8 minutes and call it done!



These babies are good with so many things!  Honestly, you could make a batch in a smaller size circle and just have them for snacks.


So here's my complete rundown to make this meal.  I walk in the door from work, go straight to the oven and preheat it to 400 degrees.  Get out my four ingredients to make the soup and dump the chicken broth and tomatoes in my pan to start simmering.  Line a cookie sheet with parchment paper for the cheese crisp.  Mound the cheese and flatten into the size crisp I want.  About now I hear the ding letting me know the oven has preheated.  I pop the cookie sheet in the oven and set the timer for 8 minutes.  Put the tortellini in my pot of simmering broth and tomatoes and head upstairs to change clothes.  When I return to the kitchen, dinner is served.  Just that easy!  Makes me feel like a rock star when I can pull off dinner this quick and effortless!


This soup is really filling.  Great to have on a cold winter night -- and it sounds like we will be getting a few of those later this week!  Enjoy!
