Let's Make Three Bean Casserole

Years ago, Eric attended a pot luck lunch and discovered this Three Bean Casserole.  He sought out who brought the dish and asked for the recipe.  So glad he did!

Thanks to Mary Ann Held for photocopying the recipe and delivering a copy to him at work the next week.  We have been making it ever since!  Typically we serve it with a side of cornbread.  It makes the perfect cold day comfort food meal!

Here's What You Need
1 can of Pork N Beans
1 can of kidney beans, drained
1 can of butter beans, drained
1/2 lb. ground beef, browned and drained
1/2 lb. diced bacon, fried and drained
1 onion, chopped
1/2 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon pepper
1/3 cup brown sugar
1/3 cup white sugar
2 tablespoons prepared mustard
2 tablespoons Karo syrup
1/4 cup catsup
1/4 cup BBQ sauce

Here's What You Do
Brown your hamburger, chopping it as it browns.  I know the recipe calls for a half-pound of hamburger, but more times than not I use a full pound.

We have this handy meat chopper and love it!  If you don't have one in your arsenal, buy one immediately!  You won't regret it.

Fry your bacon and place it on a paper towel to absorb the extra grease.  I like to dice the bacon before frying it.

Mix all the ingredients together.  Bake uncovered at 350 degrees for 1 hour.  You can mix this together ahead of time and refrigerate until you are ready to bake.

It really doesn't get much easier than that!  Hope you enjoy it as much as we do.  Click HERE for the printable recipe.
