Pepperoncini Beef

If you've read my blog, you know how I love easy recipes.  Today I'm sharing the recipe for Pepperoncini Beef.  I know, it's not corned beef or something green to celebrate St. Patrick's Day.  But if you saw my Weekending Post, you know this is what we had for dinner on Sunday so I want to share it while it's fresh in my mind.


This mouth-watering beef recipe is made in the Crockpot (doesn't get much easier than that) and has only 3 ingredients.  It can be made with either a beef or pork roast.  This week I decided to use a beef roast because that's what I had on hand and I was so busy watching episodes of Scandal there was no way I was going to go to the store to get a pork roast.

Start by salt and peppering your roast.  Lay it in the bottom of your Crockpot. (I didn't get a picture of that because, really, who wants to see a piece of raw meat laying in the bottom of a Crockpot.)

Pour a bottle of Italian dressing over the top.  I have used every brand of Italian dressing, so any kind will work.  Next add in about 12 pepperoncini.  Pour in a tablespoon or so of the juice.  Be careful - the more juice you add, the spicier the beef/pork becomes.  I usually add about a tablespoon and the meat turns out mildly spicy.

Next turn your Crockpot on high for 6-8 hours or low for 8-10 hours.  Walk away and do something fun!

When you come back, lift the lid and you should have something like this.  Wish you could smell the goodness!  Your house will be filled with an aroma that will get everyone to the dinner table on time.


If you plan on using the meat to make sandwiches, shred the meat after it has cooked the appropriate amount of time.  This is easy to do because it's so tender it just falls apart.  I usually let it sit in the juice while I get the rest of the meal on the table.  My side dish is typically potato salad.

The meat is so scrumptious, tender and moist!  We love it.  Hope you do too!

    1. I think you would be safe to serve this to picky kids. We aren't spicy food eaters and it's great for us. I use the mild pepperoncinis and just a little juice - like seriously just a tablespoon. Turns out very mild.

  9. I went from almost clicking off this recipe to actually thinking about making it for tomorrow night lol. It took me a minute to realize how yummy this is. I'm not really an italian dressing person, but I LOVE my crockpot!!!
