Let Them Eat Fruit!

Saturday we ventured down to Soulard Market and I was looking for fruit.  My friend, Linda, had made a fabulous fruit salad for Ian's graduation a few years ago and I've been imitating it ever since.  I thought it would be the perfect fruit salad to serve on Easter.

This is one of the simplest recipe you'll ever come across and, as an added bonus, it's good for you.  I'm not always the best at eating a piece of fruit, but put a bowl of this fruit salad in front of me and it's gone before you can blink your eye -- well, maybe not that quick, but pretty darn quick.

Here's the instructions:

Gather a bunch of fruit.  I used two Granny Smith apples, some blueberries, raspberries and strawberries.

Cut the apples into bite-size pieces.  Also slice the strawberries (I sliced them into fourths).

Dump all the fruit into a bowl and sprinkle with a packet of sugar-free jello mix.  I typically use raspberry jello.  Stir.  That's it.

Pretty simple, don't you think?!?  This is such a pretty dish to have sitting on your table at meal time!

Sometimes I spoon it into dessert cups and put them at each place setting.  For Easter, I decided to use one of my Grandmother's bowl.  Either way, it's a great fruit salad that you can whip up in a very short period of time.

    I'm a vegetarian, and we don't have Jello in Denmark, if I weren't and if we did, I'd be tempted to give it a try :)
