Let's Make Stuffed Chicken Breasts

I've been doing a lot more cooking the last couple of weeks and a few nights ago I tried something so good I just have to share it with you.  In the load of meat I purchased before sheltering in place was a pack of chicken breasts.  Here's what we did with them ~


Here's What You Need
4 Skinless, boneless chicken breasts
Italian seasoning mix
Garlic Powder
Smoked Paprika
Salt and Pepper
12 Asparagus stalks end trimmed
Sundried Tomatoes
4 Slices Mozzarella Cheese
Olive Oil


Here's What You Do

Preheat the oven to 400 degrees.

Pound the chicken to an even thickness.  (Great way to take out some stress!)


Sprinkle each chicken breast with the Italian seasoning, garlic powder, smoked paprika, salt and pepper.  


                     

Lay a piece of cheese, asparagus and sun-dried tomatoes on half of each breast.  Fold over the chicken and place a toothpick in to keep it together.


Heat the oil in an oven-proof skillet.  I love using a cast-iron skillet.  


Over medium heat, add the chicken and sear it until it's nicely brown.  This should take about 3-5 minutes per side.  

Put the skillet in the oven and let bake for 15-20 minutes.  Check the temperature to make sure the internal temperature is a safe 165 degrees.


This recipe would be great if you are cooking for one or an entire family.  We certainly enjoyed it!  The leftovers were quite scrumptious too!
