With the holidays right around the corner, it's the season for breakfast casseroles. Today I'm sharing one of our family's favorites - Panera Asiago Bagel Breakfast Bake.
This casserole needs to be assembled the night before you plan on serving it. This comes as a blessing and a curse. A blessing because it makes serving breakfast so easy in the morning because you just need to pop it in the oven. A curse because you really can't decide you want it the day of. So plan ahead and give this scrumptious breakfast casserole a try!
Here's What You Need
4 Asiago cheese bagels (plain bagels will work if you can't get Asiago)
8 eggs
1/4 teaspoon salt
2 cups of milk
1 tablespoon fresh chopped tarragon (or 1/2 teaspoon dried)
1/4 teaspoon paprika
6 ounces grated Monterey Jack cheese
6 ounces grated Asiago cheese
Here's What You Do
Start the night before you want to serve.
In a large mixing bowl, beat together the eggs, salt, milk, tarragon, and paprika. Grind a bit of pepper in to taste.
In a separate bowl, mix together the cheeses.
Cut the bagels into bite-size pieces.
Grease a deep dish casserole dish. Lay in a layer of bagel pieces, then cheese. Repeat until all are used.
Pour the egg mixture evenly over the entire dish. Cover and put in the refrigerator overnight.
When you're ready to bake, preheat the oven to 350 degrees. Bake uncovered for 1 hour or until the top is golden brown.
We just enjoyed this casserole over the weekend for brunch. It makes the perfect meal served with sausage or bacon and a fruit salad on the side. Enjoy!
